Three really is hard to do... but I'll try:
Horror Show by Iced Earth - I like everything from Burnt Offerings forward from them, and go back and forth on favorite cd. Right now it's Horror Show, because the music is just amazing, and Matt Barlow has got to be my favorite singer of all time.
Brave New World by Iron Maiden - I know a lot of Maiden fans think everything after Powerslave sucks. I think with this one, Iron Maiden recaptured what made them great in the 80s and made it even better.
Those two were the easy ones, now I have to go look at my cd collection to pick a third...
I've got to pick Mellon Collie and the Infinite Sadness by the Smashing Pumpkins, because it's just amazing. Forced to choose between the two cds, I'd also choose the first disc because it was a lot better than the second.
