I edit a lot of things about Ravenloft. Fiends, for example are formed from the Demiplane itself and are not Outsiders. This was presented as an option in VRGTF, but I do not see it used often, or ever really. Fiends from the rest of the multiverse can still get stuck in the Demiplane, but it is not...

What does your ideal Ravenloft videogame look like? I would love a classic Survival Horror game like the older Resident Evils, or for a newer game like this check out Tormented Souls.

What Monstrous PCs would you allow?
I would allow weaker undead like sentient skeletons and zombies and good aligned werebeasts like wereravens. No werewolves or vampires or fiends or ghosts though. I would still expect any monstrous pc to play a heroic character lest they attract the dark powers.

Yuan-ti in Ravenloft should IMO be the product of a curse. Either someone did something bad and Yuan-ti showed up to make his life more miserable or some people went too far and were turned to Yuan-ti. As always, Rule 0. But in this case my way is the same as the rules in the 3e books; only Outsiders with the Good or Evil descriptors have reality wrinkles. Neutrals don't, IMO. I haven't made much use of fiends and similar creatures in Ravenloft, but a reality wrinkle featured in my campaign here ...

You can see it the other way : danger is never far away from you. And you have no place far away to hide. Kind of cool too.
