PG 46 to 47 of Happy Jacks Funhouse which is a 5e Adventure from the DM's Guild has a write up for a Were Hippo and even some minor rules for giving PC's Were Hippo Lycanthropy.
While I have to adapt these rules to Pathfinder/3.5 stats to use them that isn't too hard going back from 5e in my book but it is a source even if not a fully canon source and one from a published and recognized adventure on DM's Guild
